Vermentino

A white grape planted widely around the Mediterranean. Fresh citrus and herb aromas are joined by a faint bitterness and salinity on the finish, evoking the food of the coast. It goes by Rolle in Provence and Favorita in Piedmont.

History

Thought to have travelled from Spain to Italy and then along the Mediterranean to Liguria, Sardinia, Corsica and southern France. Long an everyday local wine, it gained international recognition from the 1980s as temperature-controlled fermentation preserved its aromatics in dry whites.

Sommelier Note

The gentle bitterness on the finish is the appeal. Against dishes built on olive oil and herbs it cuts through the fat. In Provence it is also central to rosé, underpinning that pale colour and saline lift.
